Seafood Paella

Ingrediants
- 2 tbsp olive oil
- 1 large sliced onion
- 2 garlic clothes, finely chopped
- 50ml white wine
- 120g sliced chorizo
- 2tsp paprika
- 1tsp saffron
- 450g paella rice
- 1 1/2 litre fish or chicken stock
- 200g king prawns
- 200g Calamari

Method
- Start your fire bowl. You can start cooking once the wood starts to turn white.
- Heat the oil in the Kadai Paella pan and cook the onion until soft and golden over the fire bowl.
- Add the chorizo and cook for a few minutes
- Stir in the wine, paprika, saffron, garlic and rice. Keep sttiring until the alcohol is cooked off.
- Pour the stock and bring to a boil. You can use a lid if you wish.
- Simmer for 15-20minutes until all the stock has nearly been absorbed.
- Add the seafood and cook for a further 5 minutes.
- Cover the pan in foil/with a lid and simmer for a further 5 minutes.
- Take the pan off the grill and serve with a lemon wedge.
